No Bake Vanilla Cherry Bars

I have been having so much fun this summer exploring the recipes from Alex at Hummusapien.  If you haven’t checked out her blog yet, you are missing out!

One of the many things I love about an Aspen summer is spending lots of quality time on my bike.  The wild flowers are amazing this year!  So in order to keep peddling, I need to keep my energy up while I am out on the road. Enter these delicious no-bake vanilla cherry bars.  These bars are full of what you need to keep going, complex carbohydrates and healthy fats.  I keep these bars in the fridge or freezer and take one out just as I start out.  Be aware that after a couple of hours sitting in the back pocket of a bike jersey, they do get a bit soft but they are still delish.  These bars are also a life saver when I am seeing clients non stop and I need a quick refuel.

NO-BAKE CHERRRY VANILLA BARS

INGREDIENTS

  • 1 cup old-fashioned oats
  • ⅓ cup ground flaxseed
  • ⅓ cup unsweetened shredded coconut
  • 3 scoops vanilla brown rice protein powder
  • ½ cup almond butter
  • ¼ cup pure maple syrup
  • 1 tbsp almond milk
  • 1 tbsp vanilla extract
  • ⅓ cup dried cherries

INSTRUCTIONS

Line a loaf pan with parchment paper (unless you want to roll them into balls instead). Set aside.

Place oats, ground flax, coconut and protein powder in a blender or food processor (I used my nutribullet). Blend until the mixture resembles a powder.

Dump dry mixture into a medium mixing bowl. Add in almond butter, maple syrup, almond milk and vanilla, stirring until well combined (I used my hands). Fold in dried cherries.

Dump mixture into lined loaf pan. Press down firmly using your fingers until it’s completely flat and smooth. Freeze for at least 30 minutes before slicing into 9-11 bars.
