Veggies, Soba and Peanut Bowl

During the summer, I like to make dishes that are fresh, cool and satisfying. I saw this recipe on the Making Thyme for Health's blog and was inspired to make it.  I ended up using  my "go to" peanut sauce recipe instead of their recipe because I really like it.  This dish is SO good and takes no time to put together.  Click here for Making Thyme for Health's recipe.

Quick Peanut Sauce

This peanut sauce recipe is based on a recipe I found in my first ever vegetarian cookbook, "Vegetarian Cooking for Everyone,"  by Deborah Madison.  This wonderful book was birthday gift from a dear friend at the time, Mimi Lourerio in 1998.  

I also love this sauce over steamed veggies and tofu or tempeh.  

Ingredients

3 tablespoons unsweetened peanut butter

2 tablespoons reice wine vinegar

1 tablespoon chopped cilantro

1 plump garlic clove, minced or put through a press

2 tablespoons soy sauce

1 teaspoon brown sugar

 

Instructions

Combine all ingredients, adding 2-4 tablespoons warm water to create the consistency you want.
