Jicama and Carrot Citrus Slaw

This is a recipe from my friend, Sandy Holmes.  As some of you know, Sandy is a Registered Dietician and is, in her own words, passionately plant strong.  She has been working on a cookbook and I was lucky enough to get a copy of her first draft.  The recipes look terrific and seem easy to make.

This fresh, clean, crunchy salad is delicious and easy to make. It works perfectly as a side for  a veggie burger and baked sweet potato fries. Because the veggies hold up well, Sandy says it is also a perfect salad to take on a hike.

Ingredients

  • 2 cups Jicama, peeled and sliced in sticks
  • 1 cup Carrots, largely shredded
  • 1/2 Red Onion, thinly sliced
  • 1/4 cup Freshly squeezed orange juice
  • 3 Tbsp. Freshly squeezed lime juice
  • 1 Tbsp. Sugar
  • 1 tsp. Salt
  • 2 Tbsp. Cilantro

Directions

Mix juices, sugar,salt and cilantro together and pour over jicama, carrots, and onions and toss and serve.
