Elvis Oatmeal

Oatmeal is a staple breakfast in our house but it can get old sometimes so I just bought a fantastic new cookbook called OATrageous Oatmeals by Kathy Hester.  This is a fantastic book and well worth adding to your collection.  This oatmeal recipe is a tribute to the King  of Rock and Roll. If you know anything about Elvis, you know that he loved the combination of bananas, peanut butter and chocolate.  This is fun to make and eat.  I go easy on the chocolate chips, just a few for effect.  So, turn on your Elvis station, and rock out with this delicious morning oatmeal treat!

Elvis Oatmeal

  • 1 cup rolled oats
  • 2 cups unsweetened vanilla nondairy milk
  • 2 medium bananas
  • ½ cup roasted peanuts, chopped
  • ½ teaspoon cinnamon
  • 3 tablespoons smooth peanut butter
  • ½ cup dark chocolate chips

Combine the oats and the milk in a saucepan, then bring to just a boil over high heat. Turn the heat down to medium and add the cinnamon, bananas, and peanuts.  Cook for about 5 minutes until the oatmeal starts to thicken, then stir in the peanut butter.  Top with chopped peanuts and chocolate chips.
