Date Truffles

These tasty truffles are made of dried fruits and nuts which means they are full of fiber and healthy fats which means this is a MUCH healthier option than those addictive sugar laden holiday cookies and candy that seems to be everywhere this time of year. The other great thing is that if you have a food processor, this recipe is fast and easy, and fast and easy is a good thing this time of year.  I hope you enjoy them!!

Date Truffles

Ingredients

  • 1 Cup raw almonds or walnuts
  • 20 Large (Medjool) dates. pitted
  • 1 Tablespoon unsweetened cocoa powder
  • Zest from 1 medium orange
  • 1 Tablespoon maple syrup
  • ½ Teaspoon ground cinnamon
  • ¼ Teaspoon ground nutmeg
  • Cocoa or coconut for rolling

Method

Grind almonds/walnuts in a food processor until fine. Add dates, cocoa powder, orange zest, cinnamon, maple syrup, and nutmeg and process until mixture forms a ball. If mixture doesn’t stick together add more maple syrup.

Form about 30 balls out of the mixture. Roll in cocoa powder or coconut.

Another variation is to dip the truffles in melted dark chocolate and then set them in the fridge. Yum.
